Casca de Lima

Lime is citrus fruit with thinner rind, characterized by bright green color. The peel is divided in two regions: (1) the epicarp or flavedo - the pigmented peripheral region with oil glands, rich in aroma active compounds, and (2) the mesocarp or albedo - the white middle layer. This by-product is a good source of fiber and has a good amount of vitamin C and minerals like potassium (K) and calcium (Ca).

By-Products

The amount of phenolic compounds of lime peel was significantly higher than those of the juices. Lime peel is rich in phenolic compounds, with a total phenolic content (TPC) determined was 3127.67 ± 90.38 mg GAE/kg, being flavanones glycosides the major sub-class, especially hesperidin (1777.46 ± 51.77 mg/kg) and eriocitrin (133.65 ± 3.89 mg/kg). Ferulic acid was the principal phenolic acid identify with 83.2 ± 2.42 mg/kg. The antioxidant capacity of the lime peel extracts was evaluated using DPPH free radical scavenging assays and the value of the antioxidant capacity was 755.78 ± 0.19 µM TE.
