Orange juice is rich in phenolic compounds, with thirty compounds identified, being flavanones the major sub-class, with great amount of hesperidin (25.85 mg/100 ml) and narirutin (5.36 mg/100 mL), and ferulic acid (3.52 mg/100 ml). The total phenolic content (TPC) determined was 48.88 mg/100 mL, assessed by Folin assay. Regarding carotenoids, lutein and zeaxanthin (115 µg/100g) and β-cryptoxanthin (169 µg/100g) were the most abounded carotenoids, responsible for their color.
